Last year we travelled to one of the most beautiful places I have ever visited – Praiano, Italy! I have a blog post with all of my favorite things we did while we were there, but high on that list was grabbing a cocktail at Cafe Mirante right as the sun started to set. Not only did they have the most incredible view, but truly the most incredible cocktail that I will forever dream about – the Amalfi Coast Mojito. Made with freshly squeezed lemon, mint leaves, raw cane sugar and a splash of limoncello, this cocktail will transport you to the Amalfi Coast!

Tips & Substitutions

  • Aside from the lemon & mint, one of the ingredients that stood out the most when they served this cocktail at Cafe Mirante was raw cane sugar! Using raw cane sugar will give the drink a deeper, richer, almost molasses-like flavor. If you do not have access to it, you can substitute for granulated sugar.
  • Don't skip the limoncello! This adds an extra kick of lemon that really compliments the fresh lemon juice.
  • Your favorite plain sparkling water works great! I prefer to use Topo Chico or Gerolsteiner in my cocktails.
  • Be sure to set aside some extra mint leaves & lemon slices to garnish.

Ingredients

– 6-8 mint leaves

– Quarter of a large lemon

– 1 tbsp raw cane sugar

– 1.5 oz white rum

– 1 oz limoncello

– 1 cup sparkling water

-Garnish: Extra mint leaves & lemon slices

Directions

  1. Add mint leaves, lemon (cut the quarter of the lemon into thirds, squeeze the juice and also add in the rind for maximum flavor) and raw sugar to your cocktail glass. Muddle until well combined
  2. Add white rum and limoncello and stir to combine with the mint & lemon mixture
  3. Fill the rest of the glass with ice, top with sparkling water, garnish with a lemon slice and sprig of mint and ENJOY!
