There is nothing better on a chilly fall day than a warm apple crisp served with vanilla bean ice cream & this recipe is on repeat in my household all season long. I love to make this when I have guests over as the sweet cinnamon apple smell fills up the whole kitchen!

Tips & Substitutions

  • I prefer the texture and flavor of old fashioned rolled oats in an apple crisp, but if you only have quick oats on hand they will work in a pinch.
  • When it comes to the type of apple, I prefer to use Granny Smith or Honeycrisp when baking.
  • Feel free to substitute brown sugar for coconut sugar if you prefer.
  • It is important that you are using cold butter when you are making the topping! I will remove my butter from the fridge right before I cut & mix in. When you are mixing it in, you will want to use your hands to mix until the butter is no longer clumpy (~2-3 minutes)
  • If you want a deeper, richer vanilla flavor, swap the vanilla extract for vanilla bean paste.
  • Don't forget to serve with vanilla bean ice cream & a caramel syrup drizzle!

Ingredients

Topping:

– 1.5 cups old fashioned rolled oats

– 1 cup all purpose flour

– 1/2 cup pecans, chopped

– 1/2 cup brown sugar

– 1 tsp cinnamon

– Pinch of salt

– 1 stick cold butter, diced into small cubes

Filling:

– 5-6 medium apples, sliced

– Juice + zest of one lemon

– 1/4 cup brown sugar

– 1 tsp cinnamon

– 2 tbsp cornstarch

– 1 tsp vanilla extract

Vanilla bean ice cream and a caramel drizzle for serving!

Directions

  1. Pre-heat oven to 350 and lightly grease a pie dish
  2. In a large bowl, add all of the topping ingredients except for the butter and mix until well combined. Add the cold butter cubes and mix well with your hands until the butter is no longer clumpy and a topping consistency has formed
  3. In a separate bowl, add all of the filling ingredients and mix until well combined
  4. Add apple filling to the pie dish and bake for 10 mins
  5. Remove from the oven & top with the crisp topping, coating the filling evenly
  6. Bake for 20-25 mins until the top is golden brown. Top with vanilla ice cream and a caramel drizzle and ENJOY!
