Bacon, Egg & Cheese Croissant Bake

One of the most frequent recipe requests that I get are breakfast casseroles that you can make ahead of time and pop in the oven the day of, and this bake is the perfect solution! Made with fresh croissants, bacon, eggs, shredded cheese & chives, it comes together quickly and makes preparing breakfast the next day as simple as pre-heating the oven. The host will love this one just has much as the guests!

Tips & Substitutions

  • The first step in this recipe is to prepare the bacon! I like cook my bacon in the oven as the directions below note, but feel free to use whatever method you prefer. Feel free to swap bacon out for breakfast sausage, or completely omit to make vegetarian.
  • For the croissants, you should be able to find them in the bakery of most grocery stores. Costco has great quality for a great price!
  • I like to use a mix of American cheddar cheese and white cheddar cheese, but feel free to mix it up based on your preference.
  • If you are making this casserole the night before, cover & refrigerate after step 4 and bake within 24 hours.

Ingredients

– 1, 10oz package bacon
– 8 large croissants
– 8 eggs
– 2 cups milk
– 1 tsp garlic powder
– 1 tsp onion powder
– 1 tsp pepper
– 1 tsp salt
– 1 cup shredded white cheddar cheese
– 1 cup shredded cheddar cheese
– 3 tbsp chives, diced

Directions

1. Line a large baking sheet with foil, add bacon and bake at 400 for 12-14 minutes until crispy. Remove from the pan onto a towel lined plate, pat dry and dice into bite sized pieces – set aside.
2. Dice each of the croissants into 5-6 pieces. Grease the bottom of a 9×13 pan, add croissant pieces and toast at 350 for 10-15 minutes
3. While the croissants are toasting, whisk eggs, milk, garlic powder, onion powder, salt, pepper, 1/2 cup white cheddar cheese and 1/2 cup cheddar cheese.
4. Pour the egg mixture on top of the toasted croissants, then add diced bacon, the remaining cheese and chives.
5. You can either bake immediately OR cover and place in the fridge overnight to bake the next day. Bake at 350 for 50-55 minutes and ENJOY!
