Dinner for two done in 25 minutes, these Beef Tostadas are a fun twist on taco night that make for the perfect weeknight dinner! The corn tortillas get nice and crispy in the oven and are topped with all of your favorite taco fixings. The best part about this recipe is that it is completely customizable to what you have on hand and what your preferences are!

Tips & Substitutions

  • I like to use ground beef for the taco meat, but feel free to substitute for ground turkey or ground chicken.
  • To make these vegetarian, substitute the beef for black beans.
  • For the tostadas, I find that corn tortillas get significantly more crispy than flour tortillas, so I would not necessarily recommend swapping for flour. I personally prefer using the small, street sized tortillas for this recipe, but any sized corn tortilla will work! Be sure to liberally brush with avocado oil before baking to ensure they are evenly crispy. You will want them to be firm and golden brown before adding the ground beef and cheese.
  • As for the toppings, this is completely customizable! I like to top mine with sour cream, diced red onion, tomatoes, cilantro and hot sauce, but you could also add refried beans (add this to the bottom layer with the ground beef & cheese), shredded lettuce, salsa, corn, etc!

Ingredients

– 1lb ground beef (can sub for ground turkey or chicken)

– 1 package taco seasoning

– 6 street taco sized corn tortillas

– 2 tbsp avocado oil

– 2 cups shredded cheddar cheese

– Toppings: Sour cream, diced red onion, cilantro, tomatoes, salsa, corn, hot sauce, etc!

Directions

  1. In a large pan over medium heat, add ground beef and cook until browned, then add in taco seasoning and mix until well combined. Set aside.
  2. Pre-heat oven to 400 and line a large baking sheet with foil.
  3. Place tortillas evenly on the baking sheet and brush both sides with avocado oil. Bake for 10 minutes or until the tortillas are firm and golden brown
  4. Add shredded cheese to each tortilla, then add taco meat and another layer of cheese and bake for another 5 minutes until the cheese has melted
  5. Top with all of your favorite fixings & ENJOY!
