BLT’s & pasta salad – two quintessential summertime foods that I decided would be even better when paired together! This BLT Pasta Salad features fresh tomatoes, crispy bacon and shredded romaine lettuce tossed together with pasta and a creamy ranch dressing. The perfect side to bring to your next summer BBQ!

Tips & Substitutions

  • Feel free to use whatever pasta shape that you prefer in your pasta salad! Any small to medium sized pasta will work great.
  • I find it both best & easiest to cook my bacon in the oven (as noted in the directions below), but feel free to cook it on the stovetop if that is your preference! Make sure to pat it dry to remove excess grease before dicing to add to the pasta salad.
  • Be sure to let the dressing mixture set in the refrigerator for at least 30 minutes before adding to the pasta salad! It will be quite runny when you initially mix it, but will thicken to the perfect consistency after it is set.
  • Pro tip: Set aside some of the diced tomato and bacon to garnish the top of the pasta salad for presentation purposes!

This is a recipe that is best served immediately. If you are making it for a group, I would recommend mixing it all together 30 minutes before serving to ensure that the romaine stays crisp!

Ingredients

– 12 oz pasta

– 1 lb bacon

– 1 head romaine lettuce, diced

– 1 large tomato, diced

– 1/2 red onion, diced

– 8oz cheese, cubed

– 1/2 cup plain greek yogurt

– 1/2 cup mayo

– 1 cup milk

– 1oz package ranch seasoning

Directions

  1. Cook pasta according to the packaging, strain, rinse and set aside to cool
  2. Add greek yogurt, mayo and ranch seasoning to a large bowl and whisk until well combined. Place in the refrigerator for 30 mins to thicken
  3. Place bacon on a large baking sheet lined with foil. Bake in the oven at 400 for 10-20 minutes depending on your oven & how crispy you like your bacon
  4. Dice lettuce, tomato, onion, cheese and bacon
  5. Add lettuce, pasta, tomato, onion, cheese, bacon and the ranch dressing into a large bowl and mix until well combined – ENJOY!
