This Blueberry French Toast Bake is the perfect sweet breakfast casserole to add to your brunch line-up! Not only is it delicious, but the best part is that it can easily be made the day before you plan to serve it. Made with ingredients like butter, brown sugar, French bread, frozen blueberries and a simple Greek yogurt glaze to top each serving with!

Tips & Substitutions

  • This will bake best if the bread is a few days old. If you are using a fresh loaf of bread, I would recommend dicing it into cubes, place on a baking tray and refrigerate for at least 2 hours or up to 10 hours to dry out.
  • As for the type of bread, I prefer to use a loaf of French Boule, but sourdough would be another great option! You should be able to find either type in the bakery section of your local grocery store.
  • If you would like to make this dairy-free, feel free to use your preferred plant-based milk and butter instead of dairy milk & butter.
  • If you have fresh blueberries on hand vs frozen blueberries, that will work great. Feel free to sub in your preferred berry - strawberries & raspberries would also work great in this recipe.
  • The Greek yogurt glaze comes together with just 3 ingredients and adds so much to this dish! It is just plain or vanilla Greek yogurt, powdered sugar and vanilla extract whisked together to create a creamy icing!
  • As noted above this is a great recipe to make ahead of time! If you are planning to make it the day before you serve it, stop at step 4, cover & refrigerate for up to 24 hours before baking.

Ingredients

– 8-10 oz bread (I am using French Boule, but sourdough would also work great. It’s best if its a few days old)
– 1/2 cup butter, melted
– 1 cup brown sugar
– 6 eggs
– 2 cups milk
– 2 tbsp maple syrup
– 1 tbsp vanilla extract
– 1 tbsp cinnamon
– 1 cup frozen blueberries
– 2 tbsp brown sugar

Greek Yogurt Glaze
– 1 cup powdered sugar
– 2 tbsp greek yogurt
– 1 tsp vanilla extract

Directions

1. Dice bread into bite sized pieces and set aside
2. In a small bowl, whisk melted butter and brown sugar until well combined
3. In a separate bowl, add eggs, milk, maple syrup, vanilla extract and cinnamon and whisk until well combined.
4. To assemble, pour the brown butter & sugar mixture onto the bottom of a 9×13 pan and spread evenly. Top with the diced bread pieces, frozen blueberries, egg mixture and sprinkle brown sugar on top.
5. At this point you can bake at 425 for 25-30 minutes OR cover and refrigerate to bake the next day.
6. To make the greek yogurt glaze, whisk powdered sugar, greek yogurt and vanilla extract together until smooth. Serve with the glaze on the side to top each serving with & ENJOY!
