I love an easy yet elevated breakfast on the weekends and these Breakfast Tostada’s are a new addition to our rotation! Made with ingredients like corn tortillas, avocado, bacon and over easy eggs, they are jam packed with flavor and come together in about 30 minutes. This is one of those recipes that feel like you’re ordering off a menu at a restaurant but in reality you’re eating at home! Don’t forget to add the fun garnishes – my favorites are fresh pico de gallo, diced jalapeños and fresh cilantro!

Tips & Substitutions

  • To make these vegetarian, feel free to omit the bacon all together. A great alternative to add some extra protein would be a layer of refried beans.
  • I prefer bacon in this recipe, but breakfast sausage would also work great. My favorite way to cook bacon is by baking it in the oven, but feel free to cook to your preference!
  • I find that using corn tortillas rather than flour tortillas work best for this recipe. If you can't find street taco sized tortillas, feel free to use small taco sized corn tortillas. If you are using any size bigger than street corn tortillas, you will need to add a minute or two onto the bake time in order for them to get crispy & golden brown.
  • For the eggs, feel free to cook them to your preference! I love using over-easy eggs for these, but scrambled eggs will also work great.
  • For the garnishes, I love to use pico de gallo, diced jalapeno's and fresh cilantro, but feel free to use whatever you prefer!

Ingredients

  • 6 pieces of bacon
  • 6 street taco sized corn tortillas
  • 2 tbsp avocado oil
  • 1 avocado
  • 6 eggs
  • Garnishes of choice – I am using pico, jalapeños & diced cilantro

Directions

  1. Cook bacon to your preference – I prefer to bake it at 400 for 12-14 minutes on a large baking sheet lined with foil
  2. On a large baking sheet lined with foil, place corn tortillas down and brush both sides with avocado oil. Bake at 400 for 10-12 minutes until the edges are golden brown and crispy
  3. While the tortillas are in the oven, prepare your eggs. I prefer over easy eggs for this recipe, but scrambled eggs will also work great
  4. To assemble tostadas, mash the avocado and spread evenly onto each tostada. Top with bacon, egg, and garnishes of choice – ENJOY!
