Brownie Ice Cream Cups

A summer treat the entire family will LOVE! These Brownie Ice Cream Cups are equally as easy as they are delicious. All you will need is your favorite boxed brownie mix, 2 muffin tins, some ice cream & toppings to make this treat that is perfect for a warm and sunny day. The cups are created by pressing one muffin tin on top of the other as soon as they are removed from the oven to create a hole in the center to perfectly place the ice cream in – as simple as that!

Tips & Substitutions

  • While the best part of this recipe is how delicious these Brownie Ice Cream Cups are, the second best part is truly how simple they are to make. All you need is your favorite boxed brownie mix, ice cream & toppings of choice!
  • To make these gluten-free & dairy-free, use the Simple Mills Brownie Mix and your favorite GF/DF ice cream!
  • My favorite boxed brownie mixes to use are Bob's Red Mill Brownie Mix and the Simple Mills Brownie Mix. Make sure you check the back of the box to see what other ingredients you need to prepare the brownies - typically eggs, milk and butter/oil.
  • Feel free to use your favorite ice cream to pair with brownies! I love to use the VanLeeuwen Vanilla Bean Ice Cream with my brownies. 
  • As for toppings, feel free to get creative! I like to use caramel syrup and sprinkles, but other great options are chocolate syrup, crushed candy bars, etc!
  • It is important that you have 2 muffin tins that are the exact same size. It is also important that you press one on top of the other as soon as you remove the brownies from the oven to ensure you get a deep cup shape. 

Brownie Ice Cream Cups

Ingredients

  • Your favorite boxed brownie mix (along with the back of box ingredients to make – eggs, butter, etc)
  • Ice cream
  • Toppings: chocolate, caramel, sprinkles, etc.

Equipment needed:

  • 2 muffin tins of the same size

Directions

  1. Prepare brownie mix according to the back of box directions
  2. Grease muffin tin with cooking spray and evenly distribute the brownie batter amongst each (you should get 12 muffin sized cups per 1 box of brownie mix)
  3. Bake according to directions on back of box (20-25 mins)
  4. As soon as you remove from the oven, place the other muffin tin on top and gently press down onto the top of the brownies. You will want the muffin tins as close to flush as possible to ensure a cup has formed, while still being pressing gently
  5. Once the brownies have cooled, remove the top muffin tin & remove each of the brownie cups
  6. Fill with ice cream, top with your favorite toppings & ENJOY!
