Caramel Apple Cheesecake Bars

Made with graham cracker crust, creamy vanilla cheesecake, cinnamon sugar apples and a brown sugar crumble, these Caramel Apple Cheesecake Bars are the perfect fall treat. Don’t let the 4 separate layers scare you out of making them! They actually come together quickly with straightforward, simple steps and are well worth the time it takes to make them.

Tips & Substitutions

  • When you are crushing the graham crackers, it is important to get them as fine as possible! I prefer to use a food processor, but you could also use a blender or manually crush them in a double bagged plastic bag using a rolling pin.
  • I find using cinnamon graham crackers really compliment the flavors of this recipe, but if honey graham crackers are all you can find, those work great!
  • You will want to be sure that you are pressing the graham cracker layer down into an even layer before baking in the oven to set. This layer needs to be fully cooled before moving onto the next step!
  • While the graham cracker layer is cooling, you can prep the rest of the layers. If you are able to find vanilla bean paste, that will take your vanilla cheesecake layer up a notch!
  • For your apple layer, I prefer to use Granny Smith apples. Honeycrisp apples would also be a great option here!
  • For the crumble layer, you will want to make sure that you are using cold butter to ensure the best texture. Mixing all of the ingredients with your hands will help to achieve that crumble like texture.
  • Bake the cheesecake in the oven for 40-45 minutes, turn the oven off, crack the door and let it cool in the oven for 30-40 minutes before taking out of the oven.
  • Refrigerate for at least 3 hours before drizzling with caramel & serving! If you are making these for an event, they would be best made the day before!

Ingredients

Crust:

– 14 sheets of cinnamon graham crackers

– 1/2 cup butter

– 1/4 cup brown sugar

– 1 tsp vanilla extract

Cheesecake:

– 16oz cream cheese, at room temperature

– 1/2 cup granulated sugar

– 2 eggs

– 1 tsp vanilla extract (or vanilla bean paste if you can find it!)

Apples:

– 3-4 Granny Smith apples, finely diced

– 1 tbsp lemon juice

– 1.5 tbsp sugar

– 1 tsp cinnamon

– 1/4 tsp nutmeg

– Pinch of sea salt

Crumble:

– 1 cup brown sugar

– 1/2 cup all purpose flour

– 3/4 cup oats (quick oats or old fashioned work)

– 1/4 cup butter, cut into small cubes

– 1 tsp ground cinnamon

– 1/2 cup caramel (for drizzling after baking)

Directions

  1. Pre-heat oven to 350 and line a 9×13 baking pan with parchment paper

Graham Crust:

  1. Crush graham crackers into fine crumbs using a food processor, blender or manually in a plastic bag with a rolling pin
  2. Melt butter in a large bowl, then add the fine graham cracker crumbs, sugar and vanilla. Mix until well combined.
  3. Lightly grease the parchment paper, then add the crust and press evenly into the pan
  4. Bake for 10 mins to set, then remove and let cool completely before moving on to the next step

Cheesecake:

  1. Add cream cheese and sugar to a large bowl and beat with a stand or hand mixer on medium speed until smooth. Add 1 egg & beat again until combined. Add the other and repeat, followed by the vanilla
  2. Pour the mixture evenly on top of the crust

Apples:

  1. Add all of the apple ingredients to a bowl, mix until evenly coated and pour over top of the cheesecake layer

Crumble:

  1. Add flour, sugar, oats, cubed butter and cinnamon to a bowl and mix with your hands. Pour evenly on top of the apples
  2. Bake for 40-45 mins until fully set. Turn the oven off & leave the door open but keep the cheesecake in the oven for 30 mins to cool. Remove from the oven and let set for AT LEAST 3 hours in the fridge before cutting (if you are making this for an event, it would be best to bake the day before and cut the next day)
  3. Add caramel sauce over top, cut & ENJOY!
