The ultimate comfort meal! This is such a nostalgic meal for me as I have vivid childhood memories eating Campbells Chicken & Stars Soup whenever I was feeling under the weather. Just like the traditional recipe, this includes simple ingredients like chicken, vegetables, stelline pasta and bone broth for the perfectly comforting & nourishing meal.

Tips & Substitutions

  • The first step of this recipe is to saute onion, carrot and celery, which is also known as mirepoix. Many grocery stores sell this pre-chopped if you are looking for a way to cut out some of the prep time!
  • This recipe calls for cooked chicken - I prefer to use rotisserie chicken, but feel free to use whatever you have on hand! If you would like to make this vegetarian, feel free to omit the chicken completely. If you are looking to add in a protein, I would sub the chicken for a can of white beans.
  • I love to use bone broth instead of chicken broth for this soup to add in some extra protein and gut health benefits.
  • The star pasta is technically called stelline pasta or pastina! You should be able to find it at most grocery stores, otherwise you can purchase here on Amazon. I will also leave a link to a great gluten-free stelline pasta option here!
  • I am always all about the soup toppings, no matter how simple the soup! For this one I love to top with freshly grated parmesan cheese, parsley and a squeeze of fresh lemon.

Ingredients

– 2 tbsp olive oil

– 2 tbsp butter

– 1 yellow onion, diced

– 6 celery stalks, diced

– 1 cup diced carrots

– 4 garlic cloves, minced

– 1 tsp dried oregano

– 1 tsp dried thyme

– 1/2 tsp dried parsley

– 1 tsp salt

– 1 tsp pepper

– 1/2 lemon, juiced

– 3 cups cooked chicken, cubed (I used a rotisserie chicken to make it simple!)

– 7-8 cups chicken broth OR bone broth (I like to use bone broth for this recipe to add some extra protein and a deeper flavor)

– 1 cup stelline pasta

– Toppings: Parmesan cheese, lemon juice & parsley

Directions

  1. In a large pot over medium heat, add olive oil and butter. Once the butter has melted, add onion, celery and carrots and simmer for 7-9 minutes until the vegetables are fork tender
  2. Add garlic, dried oregano, thyme, parsley, salt, pepper and lemon juice and mix until the vegetables are evenly coated
  3. Add chicken broth and chicken, mix and bring to a simmer
  4. Add stelline pasta and simmer for 6-7 minutes until the pasta is al dente
  5. Top with parmesan cheese, lemon juice, parsley & ENJOY!
