I love to set myself up for the week by prepping easy, nourishing & delicious snacks to have on hand, and these are just that! These Chocolate Coffee Baked Oat Bars are the perfect snack, breakfast or even dessert and they are made with ingredients like rolled oats, cocoa powder, coconut oil, maple syrup and a pinch of coffee grounds! I like to pair coffee grounds with chocolate in baked goods because I find that it really enhances the depth of flavor. Top these bars with some yogurt with breakfast or vanilla ice cream for dessert – the whole family will love!

Tips & Substitutions

  • These Chocolate Coffee Baked Oat bars are gluten-free and can easily be made dairy-free by using plant-based milk, dairy free chocolate chips and topping with dairy-free yogurt or ice cream (or omitting this all together).
  • This works best with rolled oats - I would avoid using quick oats for this recipe.
  • While there is only a teaspoon of coffee grounds in the ingredient list, they make a big difference! When you add coffee grounds to chocolate baked goods, it helps to bring out the rich depth of flavor in the chocolate. Feel free to use whatever you have in your pantry - Cameron's Coffee is my personal favorite!
  • Once you have melted your coconut oil, it is crucial that you let the coconut oil cool for about 5 minutes before adding into the rest of the wet ingredients. Once you have mixed the wet ingredients well, pour them into the dry ingredients immediately to ensure that the coconut oil does not solidify.
  • The suggested bake time is 20-22 minutes - keep an eye on them around the 18 minute mark to ensure you are not over baking!
  • As soon as you remove them from the oven, I like to generously sprinkle flakey sea salt over top! Maldon salt is my favorite!
  • If I am enjoying a Chocolate Coffee Baked Oat Bar for a snack or breakfast, I like to top it with some plain or vanilla Greek yogurt, but if I am having it for dessert I like to add a scoop of vanilla ice cream!

Chocolate Coffee Baked Oat Bars

Ingredients

– 2 cups rolled oats
– 1/3 cup cocoa powder
– 1 tsp baking powder
– 1/4 tsp salt
– 1 tsp coffee grounds
– 2 eggs
– 1/2 cup maple syrup
– 1/3 cup coconut oil, melted and cooled
– 1.5 cups milk of choice
– 1 tsp vanilla
– 1/2 cup chocolate chips + more for topping!
– 1 tsp flakey sea salt
– Yogurt or ice cream to top!

Directions

1. In a large bowl, add oats, cocoa powder, baking powder, salt and coffee grounds and mix until well combined
2. In a separate bowl, add eggs, maple syrup, coconut oil, milk and vanilla and whisk until well combined
3. Pour wet ingredients into the dry ingredients and mix to combine, then add chocolate chips and mix again
4. Line a 9×9 baking pan with parchment paper and lightly grease with cooking spray. Pour batter into the pan, top with extra chocolate chips and bake at 350 for 20-25 minutes until cooked through. Top with flakey sea salt immediately after baking.
5. Serve on their own or topped with yogurt or ice cream & ENJOY!
