Cinnamon Sugar Bunny Tails

Inspired by one of my favorite bakeries in the Twin Cities, these Cinnamon Sugar Bunny Tails are perfect for Easter brunch! If you live in Minneapolis, you are probably familiar with Isles Buns – the best cinnamon roll in the Twin Cities!!! They have what they call Puppy Dog Tails which are basically scraps of cinnamon rolls that they twist into a smaller version of a cinnamon roll & serve them with a container of cream cheese frosting on the side, which is what this recipe was inspired by. These Cinnamon Sugar Bunny Tails are made using puff pastry sheets and cinnamon sugar with a dollop of homemade vanilla cream cheese frosting – shaped into a bunny with a tail!

Tips & Substitutions

  • It is important that your puff pastry sheets are brought to room temperature before starting the recipe! I like to remove them from the freezer and into the refrigerator the night before I plan on making them, then pull them out of the fridge about 40 minutes before beginning the recipe.
  • It is also important that the sheets are rolled out to the exact same length! I like to use a ruler to make sure they are even as they will be stacked on top of one another.
  • One of the puff pastry sheets will be your cinnamon sugar sheet, the other will be your plain buttered sheet. Leave 1/2 inch on each side of each sheet (I like to also measure this) so that you can easily seal the pastry shut with the back of a fork. It is important that you gently push the sheets together to ensure that they stick together, making it easy to twist.
  • Feel free to use a hand mixer OR stand mixer for the vanilla cream cheese frosting! If you want to give it an extra vanilla boost, sub in vanilla bean paste instead of vanilla extract.
  • To pipe the tails, I bought a simple piping kit, but if you don't have one on hand you could always fill a large plastic bag with frosting, push it down to the corner and cut the tip to mimic a piping bag.
  • These are best when enjoyed immediately! If you have leftovers, keep them stored in the refrigerator. 

 

 

Cinnamon Sugar Bunny Tails

These Cinnamon Sugar Bunny Tails are made using puff pastry sheets and cinnamon sugar with a dollop of homemade vanilla cream cheese frosting - shaped into a bunny with a tail!

Ingredients

Tails:
– 2 sheets puff pastry, thawed to room temperature
– 3.5 tbsp butter, melted
– 2.5 tbsp granulated sugar
– 2.5 tbsp brown sugar
– 1 tbsp cinnamon
– 1 tbsp cold water
Vanilla Cream Cheese Frosting:
– 4oz cream cheese, at room temperature
– 3 tbsp butter, at room temperature
– 1 cup powdered sugar
– 1 tsp vanilla extract
– 1/2 tsp salt

Directions

1. On a lightly floured surface, roll out each sheet of puff pastry into equal squares
2. Brush both sheets with melted butter, leaving a 1/2 inch boarder on the left and right sides.
3. Mix sugar, brown sugar and cinnamon together in a small bowl and sprinkle over the buttered portion of ONE of the puff pastry sheets. Brush the 1/2 inch sides on the sugared puff pastry with cold water, then place the buttered sheet on top of the sugared sheet, buttered side down. Gently press both sheets together.
4. Using a fork, seal left and right sides that were left bare
5. Using a pizza cutter or sharp knife, cut horizontally into 14-16 long strips.
6. Shape each strip it into a U, then twist twice to form into a bunny shape. Place onto a large baking sheet and refrigerate for 30 minutes
7. Place them on a baking sheet lined with parchment paper and bake at 400 for 15-17 minutes until golden brown (with a large baking sheet this should require 2-3 batches)
8. Prepare vanilla cream cheese frosting. Using a stand mixer or electric hand mixer, beat cream cheese and butter until smooth. Add vanilla, salt and half of the powdered sugar, mix until smooth, then add the rest of the powdered sugar and beat until smooth
9. Pipe the frosting onto the round part of the bunny pastries & ENJOY!
