Whether you are looking for a simple, light yet flavorful salad to have for dinner or a side salad to bring to a gathering this summer, this Citrus Arugula Salad is the perfect solution! The salad itself is very simple – it’s just arugula, quinoa, chickpeas, an orange, slivered almonds, goat cheese and avocado with a homemade citrus vinaigrette that really pulls the salad and is made from ingredients you probably already have in your fridge & pantry. You can serve it on its own or top it with some grilled chicken or salmon for extra protein! It comes together in under 15 minutes and makes for the perfect salad on a hot summer day.

Tips & Substitutions

  • This salad is gluten-free by nature and can easily be made dairy-free by omitting the crumbled goat cheese. It will serve 3-4 meal sized servings or about 6-8 for a group!
  • I love including cooked quinoa and chickpeas to salads for added protein, but if I am making it for dinner I like to add grilled chicken or salmon on top, as well.
  • I prefer the flavor of goat cheese for this salad, but crumbled feta would also pair nicely.
  • The citrus vinaigrette is made using very simple ingredients and really pulls the whole salad together, but if you would prefer to purchase a store bought dressing, I would recommend any light, citrus-forward vinaigrette.
  • This salad is best when served immediately. If you are prepping it for the week, reserve the dressing and dress each serving before enjoying.

Ingredients

  • 4 cups arugula
  • 1 cup cooked quinoa
  • 1 cup chickpeas, drained & rinsed
  • 1 avocado, diced
  • 1 orange, peeled & diced
  • 1/3 cup slivered almonds
  • 1/3 cup crumbled goat cheese
  • Optional: Grilled chicken or salmon
Citrus Vinaigrette 
  • 1/4 cup olive oil
  • 2 tbsp orange juice (~1 orange)
  • 1 lemon, juiced
  • 1 garlic clove, minced
  • 1 tbsp dijon
  • 1 tbsp maple syrup
  • 2 tbsp shallot
  • Salt & pepper

Directions

  1. To make the vinaigrette, add all of the listed ingredients to a medium sized bowl and whisk together until well combined
  2. In a large bowl, add arugula, cooked quinoa, chickpeas, avocado, orange, slivered almonds, crumbled goat cheese and citrus vinaigrette and mix until well combined
  3. Optional to top with an extra protein of choice (grilled chicken or fish) & enjoy!
