Made with ingredients like Italian sausage, fire roasted tomatoes, coconut milk, pasta and kale, this Creamy Kale & Sausage Soup is arguably the most remade recipe that I have ever shared! It is packed with flavor, comes together in 30 minutes and is a guaranteed crowd pleaser. Serve it with some freshly grated parmesan cheese and some warm fresh bread and you have the perfect dinner!

Tips & Substitutions

  • To make this soup vegetarian, substitute the Italian sausage for a can of white beans and the chicken broth for vegetable broth.
  • To make this soup in a crockpot, cook the Italian sausage until browned then add to your crockpot along with the rest of the ingredients except for the pasta and kale. About 30 minutes before serving, cook the pasta according to packaging and add the pasta and kale to the crockpot and cook on low for 20 minutes.
  • If you would like to add some spice, feel free to use half spicy Italian sausage, half mild Italian sausage.
  • Make sure that the coconut milk you are using is canned, full fat and unsweetened! The soup will NOT taste like coconut - this is a way to add creaminess to the soup without adding cream. If you would prefer to use cream, substitute the coconut milk for 1 cup heavy cream.
  • Feel free to use whatever small pasta you have on hand! I prefer to use orecchiette, but cavatelli, ditalini or elbows would also work great.
  • It is easiest to purchase a bushel of kale vs a bag of pre-diced kale for this soup because you will want to make sure that you are destemming every piece. To destem a bushel of kale, fold one side of the leaf over the other and cut along the stem to easily remove.
  • Be sure to top with lots of grated parmesan cheese! I also like to add a sprinkle of red pepper flakes for some heat.
  • In my opinion, the longer this soup sits, the better it gets! Because it includes pasta, the pasta will gradually start to absorb the liquid, so I prefer to re-heat over the stovetop with some extra broth to maintain the liquid.

Ingredients

– 1.5lbs ground Italian sausage 

– 1 yellow onion, diced

– 1 red bell pepper, diced

– 1 green bell pepper, diced

– 5 garlic cloves, minced

-1 tsp pepper

-1 tsp salt

– 1/2 lemon, juiced

– 1, 14 oz can fire roasted tomatoes

– 12 oz can full fat coconut milk (NEEDS to be in a can and make sure you use unsweetened! The best brand for this is Target Good & Gather)

– 8 cups chicken broth

– 2.5-3 cups small pasta (cavatelli, orecchiette, elbows, etc)

– 5-6 cups kale, destemmed and chopped

– Grated Parmesan cheese for topping

Directions

  1. In a large pot over medium heat, add Italian sausage and cook for 5-7 until browned 
  2. Add onion, red bell pepper, green bell pepper and garlic and cook for 3-5 minutes until fork tender
  3. Add lemon juice, tomatoes, coconut milk, chicken broth and pasta into the pot. Bring it to a boil, then turn down the heat and simmer for 10 minutes
  4. Once the pasta is cooked through, add the kale and cook for another 3 mins. If your pot has a lid, cover to help the kale wilt. If not, push down with the back of a wooden spoon until the kale has shrunk to half its original volume
  5. Serve with Parmesan cheese grated on top and ENJOY!
