Chicken salad has always been one of my favorite meals for an easy meal prepped lunch, but this Curry Chicken Salad might just be my favorite variation I have ever tried. It is the perfect combination of shredded chicken, wild rice, diced green apples, golden raisins and green onion tossed in a sweet curry mayo. This is a recipe that was passed down to me from Matt’s Aunt Kristin & quickly has become a staple in our household. It is not only perfect for meal prep, but is great if you are looking for a meal to serve at a baby or bridal shower!

Tips & Substitutions

One of the reasons that I love to make chicken salad for meal prepped lunches is because there are so many ways to enjoy it! I love putting it in a wrap, on toasted bread, on a croissant (I like to buy mine from the Costco bakery for this!), in lettuce wraps or over a salad!

A few tips for making this recipe:

  • I find that using rotisserie chicken makes for the easiest + best chicken salad, but feel free to use any type of cooked chicken!
  • The diced green apple, golden raisins & orange marmalade add the perfect amount of texture and sweetness!!
  • This recipe will stay well in the fridge for 5-6 days. If you are making this for an event, feel free to make the day before - it will allow the flavors to really soak in!

Curry Chicken Salad

This Curry Chicken Salad is the perfect combination of shredded chicken, wild rice, diced green apples, golden raisins and green onion tossed in a sweet curry mayo.

Ingredients

– 3 cups diced chicken (I like to use rotisserie chicken)

– 1.5 cups cooked wild rice

– 1/2 cup diced green apple

– 1/2 cup golden raisins

– 2 tbsp diced green onions

– 3/4 cup mayo

– 1/2 cup orange marmalade

– 1/4 cup plain Greek yogurt

– 2 tbsp lemon juice

– 2.5 tsp curry powder

– 1/2 tsp salt

– 1/2 tsp pepper

– Mixed greens, croissants, lettuce wraps or crackers for serving!

Directions

  1. Add chicken, wild rice, green apple, green onions and pecans to a large bowl and mix until well combined
  2. In a separate bowl, add mayo, orange marmalade, Greek yogurt, lemon juice, curry, salt and pepper and mix until smooth, then add this mixture to the chicken salad and mix until combined.
  3. Serve on a croissant, over greens, lettuce wraps or with crackers and ENJOY! 

*Keeps well in the fridge for 5-6 days
