Dill Pickle Guacamole

For all of my pickle lovers out there – this one is for you! My friend ordered pickle guacamole at a restaurant and requested that I figured out how to make it home, and it turned out even better than I had imagined. The addition of pickles and fresh dill to a traditional guacamole recipe as the perfect amount of texture & flavor!

Tips & Substitutions

In my opinion, guacamole is a taste as you go recipe. Feel free to add more or less of any of the below ingredients depending on your preferences!

  • Be sure to keep an avocado pit or two! Adding the pit into the final product while storing it will help for it to stay fresh & bright green for as long as possible.
  • Like I mentioned above - taste as you go! I like to have some tortilla chips out while I am making it to see if I need more lime, salt, onion, etc!
  • I like to reserve some extra pickles and fresh dill to garnish on top for presentation - especially when taking to a party or serving a group!
  • I like to serve this guacamole with tortilla chips and vegetables to dip.

Dill Pickle Guacamole

Ingredients

– 5 avocados

– 1/2 red onion, finely diced

– 1 jalapeno, deseeded & diced

– 2 limes, juiced

– 2 tbsp cilantro, diced

– Salt to taste (start with 1/2 tbsp but taste to adjust!)

– 3 tbsp fresh dill, diced

– 3-4 tbsp pickle juice (start with 3 and adjust!)

– 1/2 cup pickles, finely diced

– Tortilla chips or veggies to dip!

Directions

1. Remove the pit from your avocados and add them to a large bowl (make sure you keep 1-2 of the pits for storage! Adding them to the container that you store the guac in will help it stay longer). Lightly mash the avocados – you will continue mixing so be careful not to over mash

2. Add red onion, jalapeno, lime juice, cilantro, salt, dill, pickle juice and pickles and mix until well combined/your desired texture is reached

3. Top with more dill & pickles for garnish and ENJOY!
