Double Cookie Dough Ice Cream Cake

For every birthday that I can remember, there has been ice cream cake involved! We typically take the short cut and pick it up from Dairy Queen (let’s be honest…no one does it better), but I thought it would be fun to make an at home version with a little bit of a twist. Cookie dough is my favorite ice cream topping, which is what inspired this Double Cookie Dough Ice Cream Cake – a guaranteed crowd pleaser!

Tips & Substitutions

This is one of those recipes that look much more complex than it actually is to make. The key ingredients that you will need are:

  • A package of chocolate chip cookies: I used Chewy Chips Ahoy in this recipe, but feel free to use your favorite brand. You could also sub in any other type of cookie here - peanut butter, Oreo, sugar cookie, etc!
  • Ice cream: I choice to do use Chocolate Chip Cookie Dough & Chocolate ice cream, but feel free to get creative here!
  • Cookie Dough Topping: I used 2 different flavors from Eventful Sweets for this cake - Chocolate Chip Cookie Dough and Double Chocolate Chip Cookie Dough. You should be able to find a variety of cookie dough topping flavors at most grocery stores - I have seen it at Target, Walmart and Cub.
  • All the fun cake toppings: Whipped cream, even more cookie dough & chocolate drizzle! 

Another key item that you will need to make this recipe is a springform pan, which is a round cake pan with a removable bottom that is held in place by a sprung collar forming the sides. You should be able to purchase from most kitchenware stores - linking one for under $15 from Amazon here!

Double Cookie Dough Ice Cream Cake

Ingredients

– 13oz package of chocolate chip cookies

– 3 tbsp butter, melted

– 1qt chocolate ice cream

– 1qt chocolate chip cookie dough ice cream

– 1/3 cup chocolate syrup

– 1/cup cookie dough topping (I used 1/2 chocolate chip cookie dough, 1/2 double chocolate chip cookie dough topping from Eventful Sweets. You can also find this in the freezer section at most grocery stores)

– Toppings: whipped cream, more cookie dough & chocolate syrup drizzle

Directions

  1. In a food processor or high speed blender, finely blend cookies. Set aside 1/4 cup of the cookie crumbles to use for later in the recipe. Add melted butter to the remaining cookie crumbles and mix until well combined
  2. Remove ice cream from the freezer for about 7-10 minutes to soften
  3. Press the cookie crumbles mixed with butter onto the bottom of a 9in springform pan. Add chocolate ice cream and spread evenly on top of the cookie crust
  4. Add chocolate syrup, the remaining 1/4 cup cookie crumbles and cookie dough, then top with a layer of the chocolate chip cookie dough ice cream
  5. Cover and set in the freezer for at least 8 hours
  6. Before enjoying, remove from the springform pan, top with whipped cream, more cookie dough and chocolate syrup & ENJOY!
