A quick, easy, healthy & affordable dinner done in under 30 mins, this Eggroll in a Bowl is a meal prep staple in our household. Made with ground beef, coleslaw mix, rice and a super simple sauce using ingredients you already have on hand, it is the perfectly balanced meal. Whether you are a college student or busy mom, I’d highly recommend adding this one to your rotation!

Tips & Substitutions

  • I prefer using ground beef for this recipe, but ground turkey or ground chicken will also work great!
  • The sauce comes together quickly and is using staple pantry ingredients for Asian-inspired meals. The chili crunch oil that I use and love is linked here, but you should be able to find it at most grocery stores!
  • The coleslaw should wilt to about half the initial volume after it steams with the ground beef - make sure that you are using a pan with a lid!
  • I like to serve with rice, but you could substitute for cauliflower rice or just omit the rice all together.
  • While the garnishes are optional, I love to top mine with diced green onion, a drizzle of sriracha and sesame seeds!

Ingredients

– 1 lb ground beef (you could also use ground turkey or ground chicken)

– 1/2 yellow onion, diced

– 8 oz coleslaw mix

– 1/2 cup coconut aminos or soy sauce

– 2 tbsp olive oil

– 2 tbsp sesame oil

– 1 tbsp chili crunch oil

– 1 tbsp honey

– 1 tbsp sriracha

– 3 garlic cloves, minced

– 1 tsp garlic powder

– 1 tsp onion powder

– 2 cups rice

– Toppings: green onion, sriracha, sesame seeds

Directions

  1. Whisk together sauce ingredients – coconut aminos, olive oil, sesame oil, chili oil, honey, sriracha, minced garlic, garlic powder and onion powder
  2. In a large pan over medium heat, add ground beef and cook until browned
  3. Add onion and coleslaw mix to the ground beef, mix well and cover for 7-9 minutes until the coleslaw has wilted
  4. Add sauce and mix well, continuing to simmer for another 5 mins
  5. Prepare rice according to packaging, top with the ground beef mixture and toppings of choice & ENJOY!
