Ladyfingers soaked in gingerbread coffee in between thick & fluffy layers of whipped mascarpone cheese and gingerbread cookie crumbles, this Gingerbread Tiramisu is the perfectly festive holiday dessert. Tiramisu is a dessert that appears to be more complicated to make than it actually is, and one of the best parts about serving it at a party is that its actually better if you prepare it the day before.

Tips & Substitutions

  • If you can't find gingerbread coffee grounds, feel free to use unflavored coffee grounds. Cameron's Coffee is my absolute favorite coffee brand & they have a great gingerbread coffee option during the holiday season! Make sure your coffee has fully cooled before soaking your ladyfingers.
  • For the best whipped cream results, make sure you are using heavy whipping cream straight out of the refrigerator - you want it to be as cold as possible! Keep an eye on it 3+ minutes after beating - you will know its done when stiff peaks have formed.
  • When you are beating the egg yolks & sugar together, you will want to beat for 4-5 minutes on high until its a gritty, pale yellow texture before adding in the remaining ingredients.
  • Adding cinnamon, ginger, nutmeg and vanilla extract will really help to bring out that gingerbread flavor! If you want to take it up a notch, sub in vanilla bean paste instead of vanilla extract.
  • When you are gently folding in the whipped cream, make sure to only mix until combined! It's important not to over mix during this step.
  • Do not soak your ladyfingers longer than 3 seconds! They will continue to absorb the liquid once the tiramisu sets, and soaking them any longer will result in a mushy texture.
  • As mentioned above, this is a dessert that actually tastes better the next day. Let it sit for at least 8 hours before dusting with cocoa powder & serving!

Ingredients

– 3-4 cups gingerbread coffee, chilled

– 2 cups heavy whipping cream (you want this COLD – remove it just before whipping)

– 4 egg yolks

– 1/2 cup granulated sugar

-8 oz mascarpone cheese

– 1 tbsp vanilla extract

-1/2 tsp cinnamon

-1/2 tsp ginger

-1/4 tsp nutmeg

– 30 ladyfingers

– Cocoa powder

-1.5 cups gingerbread cookies, crushed

Directions

  1. Prepare coffee according to package, pour into a shallow bowl and place in the refrigerator to cool
  2. Prepare whipped cream by adding heavy whipping cream to a large bowl and whisk on medium speed for 3-4 minutes until stiff peaks form
  3. Add egg yolks and sugar to a large mixing bowl and whisk on high for about 5 minutes or until a thick and pale yellow cream has formed. Add the mascarpone, vanilla, cinnamon, ginger & nutmeg and whisk again for 2-3 minutes until smooth & combined. The texture should be smooth and creamy
  4. Gently fold the whipped cream into the mascarpone mixture just until combined -do not over mix
  5. Individually submerge lady fingers into the chilled coffee for 2-3 seconds, then place in your 9×13 pan. Repeat until the bottom of the pan is covered
  6. Add a thick layer of the cream, then 1/2 of your crushed gingerbread cookies. Repeat with another layer of ladyfingers & another layer of cream, getting the top layer of cream as smooth as you can. Cover and refrigerate for at least 8 hours – 24 hours preferred and can be up to 2 days
  7. Dust with cocoa powder and add the rest of your gingerbread cookie crumbs & ENJOY!

*This dessert holds well in the fridge for days! Can be made 2-3 days before serving.
