Packed with protein, a variety of vegetables and so much flavor, these Greek Chicken Plates are the perfectly balanced meal! Great for meal prep or for an easy weeknight dinner, this recipe has 4 different elements – chicken, Greek style vegetable salad, rice & plate garnishes! Not only does it taste incredible, but plates beautifully as well!

Tips & Substitutions

  • To make this dish vegetarian, substitute the chicken for a can of chickpeas.
  • While the recipe would work just fine without marinating the chicken, I would HIGHLY recommend it! Marinating the chicken in Greek yogurt makes for the best, juiciest meat, along with all the flavor that comes from the parsley, seasonings and lemon juice. Let it marinate for at least 30 minutes before preparing.
  • As mentioned in the directions, I prefer to use an outdoor grill, indoor grill or air fryer to cook the chicken, however it also can be prepared in the oven at 350 for 30 minutes or until cooked through.
  • Because the salad is so simple & fresh, it will be important to use good, high quality olive oil. Graza drizzle is my personal favorite, but there are a ton of other great options in the market right now!
  • I like to plate mine with tzatziki, hummus, crumbled feta, fresh parsley and a squeeze of lemon, but feel free to get creative!

Ingredients

Chicken

– 1.5lbs chicken breast

– 1/2 lemon, zested

– 1 lemon, juiced

– 1/4 cup olive oil

– 1/4 cup greek yogurt

– 1/4 cup parsley

– 1 tsp garlic powder

– 1 tsp onion powder

– 1/2 tsp cumin

– 1/4 tsp chili flakes

– Salt & pepper

Salad

– 3 medium tomatoes, diced

– 4-5 mini cucumbers, diced

– 1/2 medium red onion, diced

– 1/4 cup pepperonchini’s, diced

– 3 tbsp olive oil

– Salt & pepper

Plates

– Rice

– Tzatziki

– Hummus

– Crumbled feta

Directions

For the chicken:

  1. Mix together lemon, lemon zest, olive oil, Greek yogurt, parsley, garlic powder, onion powder, cumin, chili flakes, salt & pepper until well combined. Pour this mixture over top of the chicken breasts and mix until each are evenly coated.
  2. Cover with cling wrap and marinade for at least 30 minutes, or up to 24 hours.
  3. Using an indoor grill or air fryer, cook chicken. It is best to use a meat thermometer to ensure your chicken is cooked through, but for my indoor grill I cooked it at 375 for 6-8 minutes per side.

For the plate:

  1. Mix tomatoes, cucumbers, red onion, pepperonchini’s, olive oil, salt & pepper until well combined
  2. Prepare rice according to the packaging, then add to the base of the plate
  3. Add the salad, chicken, tzatziki, hummus & crumbled feta on top of the rice & ENJOY!
