This Lemon Sorbet Rosé is such a fun summer treat to have on hand when you are hosting or even just as a fun patio sipper. You can easily make it as a cocktail or a mocktail, making it the perfect light & refreshing drink for anyone and everyone! Making lemon sorbet at home is actually very easy and only requires a handful of ingredients – lemon zest, fresh lemon juice, water, honey and a splash of vodka. You’ll start by zesting & juicing all of your lemons, then move on to making the honey lemon simple syrup, which you will chill and combine with the fresh lemon juice, along with a splash of vodka. The vodka will help it stay light and fluffy rather than icy as it will prevent it from freezing completely, but you can definitely leave it out if you would like to make it completely alcohol free. Strain it through a fine mesh strainer, then pour it into a container to freeze, stirring every hour until its frozen and slushy. Scoop it into coupe glasses, pour your favorite rosé or rosé equivalent overtop & enjoy as a sipper or with a spoon!

Tips & Substitutions

  • Don't let the homemade lemon sorbet intimidate you! It is extremely easy to make at home and only requires a handful of ingredients - lemon zest, fresh lemon juice, water, honey and a splash of vodka. It will take about 6-8 hours to freeze into a soft slushy texture, so I would recommend making it the day before you plan to enjoy!
  • The purpose for adding a splash of vodka is to prevent the sorbet from freezing into an icy block. When you add vodka, it creates a really soft slush that doesn't freeze all the way through, creating a really nice mouthfeel! If you need to completely remove it to make it alcohol free, just note that the final result may be a little stiffer than the pictures above show.
  • This is a drink that can very easily be made into a cocktail OR a mocktail! First, you will want to scoop the sorbet into a couple glass - I like to use either my favorite textured coupe glasses or the fun colored coupe glasses from the images in this blog post! You will then top it with your favorite  rosé or non-alcoholic equivalent! I would recommend either a non-alcoholic rosé, Health-Ade Bubbly Rose kombucha or Raspberry Rose Poppi.
  • You can either sip on these as the lemon sorbet melts or serve them with mini spoons to enjoy the sorbet as it melts into the rosé.

Ingredients

Lemon Sorbet:

  • 1.5 cups fresh lemon juice (~7-8 lemons)
  • 2 tbsp lemon zest (~4 lemons)
  • 1 cup water
  • 1.5 cups honey
  • Optional: 1 tbsp vodka (this allows the sorbet to maintain a soft, slushy, velvety texture)

Rosé

  • Cocktail: Your favorite rosé of choice
  • Mocktail: Your favorite non-alcoholic rosé or sparkling drink with similar flavor profiles  

Directions

  1. In a saucepan over medium heat, add water, honey and lemon zest. Bring to a boil, then simmer for 5 minutes. Set aside to cool completely

  2. Combine simple syrup, freshly squeezed lemon juice and vodka (optional), then pour through a fine mesh strainer into a medium bowl.

  3. Pour the  mixture in a freezer in a shallow dish and scrape with a fork every hour until frozen (6-8 hours).

  4. To serve, scoop lemon sorbet into coupe glasses, top with rosé of choice and enjoy!
