The perfect appetizer or summer side dish, these Loaded Smashed Potatoes are a guaranteed crowd-pleaser! The baby red potatoes are boiled and smashed thin, then baked in the oven to get nice and crispy before you top with shredded cheddar cheese, sour cream, bacon & chives – the elements of a baked potato in a handheld bite.

Tips & Substitutions

  • These Loaded Smashed Potatoes consist of 5 ingredients - baby red potatoes, shredded cheddar cheese, sour cream, bacon and chives.
    • Baby red potatoes - I like to use these because they are bite sized & take less time to get crispy in comparison to a larger potato. If you would like to use a larger potato, all you will need to do is add more time to bake - start with adding 5 minutes to the initial bake and add from there if needed. It is important for the potatoes to cool/come to room temperature before baking to help get as crispy as possible.
    • Shredded cheddar cheese - Feel free to measure with your heart when adding to the potatoes! I like to use cheddar cheese, but feel free to use whatever type of cheese you have on hand.
    • Sour cream - Feel free to substitute this for plain Greek yogurt if you prefer a lighter, higher protein option.
    • Bacon - This is another ingredient that you can measure with your heart! I prefer to prepare my bacon by baking it at 400 for 12-15 minutes until crispy, but use the method that works best for you!
    • Chives - Don't skip this step! Not only do the chives add color, but the perfect amount of flavor.
  • These are best if served immediately & are great as an appetizer or even as a side to your meal!

Loaded Smashed Potatoes

Ingredients

  • 1.5 lbs baby red potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 8 pieces of bacon, cooked & diced
  • 1/4 cup chives, finely diced

Directions

  1. Prepare bacon to your liking. My preferred method is baking at 400 for 12-15 minutes until crispy. Pat to remove the grease & finely dice
  2. Bring a large pot of water to a boil. Salt the water, then add the potatoes and boil for about 12-15 minutes until fork tender. Strain and rinse well with cold water
  3. Line a large baking sheet with foil, grease with cooking spray and add potatoes. Spray the bottom of a glass with cooking spray, then gently press down onto the top of each potato to smash. The thinner they are smashed, the crispier they will get
  4. Let the smashed potatoes cool on the tray for 15-20 minutes, then spray with cooking oil
  5. Bake in the oven at 400 for 20-22 minutes. Remove and top each potato with shredded cheese and bake for another 3-5 minutes until the cheese has melted
  6. Top each potato with sour cream, bacon and chives and ENJOY!
