My twist on the Tuscan-inspired dish, these Marry Me Chicken Meatballs are my definition of the perfect 30 minute weeknight dinner! The meatballs are made using a handful of simple ingredients like ground chicken, breadcrumbs, an egg and Italian seasoning, then baked in the oven while you prepare the light & creamy sun-dried tomato and spinach sauce. Serve them over pasta, rice or enjoy them on their own for a meal the entire family will love.

Tips & Substitutions

  • I find that baking the meatballs not only gives them my ideal texture, but it ensures they are cooked through evenly and also saves some prep time! If you prefer to pan sear them, that would also work for this recipe. You will want to make sure the meatballs are the same size when you roll them out to ensure they cook evenly - I like to use a cookie scoop for this step!
  • I find that a white meat pairs best with the cream sauce & ground chicken is my preference, but you could also substitute for ground turkey if you would like.
  • I would recommend starting the sauce after you pop the meatballs in the oven so that it is done by the time the meatballs are cooked! It’s a very simple cream sauce that comes together in about 10 minutes.
  • I prefer to serve these meatballs over pasta, but you could also serve them over rice or enjoy them on their own! Make sure to garnish with some extra parmesan cheese and red pepper flakes.

Ingredients

– 1.5lbs ground chicken (can sub for ground turkey)

– 1/2 cup bread crumbs

– 1 egg

– 1/2 cup parmesan cheese

– 3 garlic cloves, minced

– 1 tbsp Italian seasoning

– 1 tsp paprika

– 1/2 tsp cayenne pepper

– Salt & pepper

Sauce:

– 1/3 cup butter

– 3-4 cloves garlic, minced

– 1.5 tbsp Italian seasoning

– 1/4-1/2 tsp red pepper flakes

– 1 cup sun dried tomatoes in oil, drained and minced

– 1 1/4 cup chicken broth

– 1 cup heavy cream

– 1 cup parmesan cheese

– 2 large handfuls of spinach

– Extra parmesan cheese to serve

– Pasta or rice to serve

Directions

  1. Pre-heat oven to 400 and line a large baking sheet with foil or parchment paper
  2. Combine all of the meatball ingredients together in a large bowl and mix well to evenly combine – I find its easiest to mix with my hands!
  3. Using a cookie scoop or large tablespoon, roll into balls and place evenly onto the baking sheet and bake for 15-18 minutes until cooked through
  4. While the meatballs are in the oven, prepare the sauce. In a large pan over medium heat, add butter, garlic, Italian seasoning, red pepper flakes and sun dried tomatoes and bring to a simmer
  5. Add broth, heavy cream and parmesan cheese and mix well until the cheese has melted. Add spinach, mix to combine and cover for 2-3 minutes until the spinach has wilted
  6. Place the meatballs into the sauce, top with parmesan cheese, serve over pasta or rice & ENJOY!
