The perfect game day bite, these Pesto Meatball Bombs come together in just 30 minutes and are simple, unique & absolutely delicious. All you will need is your favorite pre-made pizza dough, mozzarella cheese, frozen meatballs, butter and pesto to make an appetizer that your guests will love. Don’t forget to serve them with some extra pesto to dip!

Tips & Substitutions

  • The first step in this recipe is to cook your frozen meatballs according to the packaging. You will want to make sure they are small to medium sized cocktail meatballs - Simek’s frozen beef meatballs are my absolute favorite!
  • For the pizza dough, feel free to grab your favorite store-bought brand. I like to use a can of Pillsbury pizza dough because it is already in a rectangular shape, making it easy to cut out small & even squares.
  • When you are filling the pizza dough squares, be sure not to over fill so that you are able to seal them shut. About 1 tsp pesto & 1 tsp of mozzarella cheese is perfect!
  • Once the meatballs are out of the oven, make your pesto butter and toss immediately! I will be easiest to do this while the meatball bombs are still warm so that they are easily and evenly coated.
  • The obvious dipping sauce is pesto, but they are also phenomenal dipped in pizza sauce!

Ingredients

– 1, 13.8oz pre-made pizza dough

-18 tsp pesto

– 18 tsp shredded mozzarella cheese (about 1/5-3/4 cup)

– 18 frozen beef meatballs

– 1/4 cup butter, melted

– 2 tbsp pesto

– 1/2 cup freshly grated mozzarella cheese

– Pesto or pizza sauce for dipping!

Directions

  1. Bake meatballs according to packaging and set aside
  2. Roll out pizza dough an even rectangle & cut into 18 squares
  3. Add 1 tsp pesto, 1 tsp shredded mozzarella cheese and 1 meatball to each square. Bring each corner to the middle of the meatball and press to seal shut
  4. Place each ball seal side down onto a greased baking sheet. Bake at 400 degrees for 12-15 mins or until golden brown
  5. Whisk together melted butter, pesto and mozzarella cheese until well combined. Pour over balls and mix until evenly coated
  6. Serve with extra pesto and/or pizza and ENJOY!
