The perfect vegetable side dish to add to your Easter brunch! These seasoned & roasted carrots pair perfectly with the creamy and subtly sweet feta dip & not to mention they plate beautifully. Not only do they taste incredible, but they come together quickly using just a few simple ingredients. A vegetable dish that everyone will be reaching for!

Tips & Substitutions

  • While I would highly recommend the addition of the whipped feta, to make this dish dairy free you can omit the whipped feta and plate the carrots on their own!
  • I love to use tricolored carrots for this dish to add a pop of color, but regular carrots will work too. When you are roasting your carrots, make sure they are bite sized and they are not touching each other on the baking sheet to ensure an even roast.
  • The whipped feta can be made in a food processor or high speed blender. I like to use hot honey for some added heat, but regular honey will work great.
  • Not only does this dish taste incredible, but it plates beautifully! Spread the whipped feta onto a shallow bowl, top with the roasted carrots and an extra drizzle of honey with some fresh herbs.
  • I love the contrast of the warm carrots on top of the cold whipped feta, but feel free to cool the carrots before plating if you would prefer.

Ingredients

– 2lbs tricolored carrots, trimmed, peeled & cut diagonal
– 3 tbsp olive oil
– 1 tbsp garlic powder
– 1 tbsp onion powder
– 1 tbsp smoked paprika
– 1 tsp salt
– 1 tsp pepper
– 8oz feta
– 3/4 cup Greek yogurt
– 1/4 cup olive oil
– 1/2 lemon, zested & juiced
– 1 tbsp honey or hot honey
– Salt & pepper
– Garnishes: Honey & fresh thyme

Directions

1. Line a large baking sheet with foil or parchment paper, grease lightly with cooking spray and pre-heat oven to 400 degrees
2. Trim & peel carrots, then dice into bite sized pieces and place in a large bowl
3. Add olive oil, garlic powder, onion powder, smoked paprika, salt and pepper to the carrots and toss until evenly combined
4. Place carrots onto the baking sheet and bake for 28-30 minutes until fork tender and golden
5. While the carrots are roasting, prepare your feta dip. In a food processor or high speed blender, add feta, Greek yogurt, olive oil, lemon zest, lemon juice, honey, salt & pepper and blend until smooth
6. Spread the feta dip onto the bottom of a shallow bowl/plate, then add roasted carrots on top along with an extra drizzle of honey and fresh thyme & ENJOY!
