When Matt and I were in college we took a trip to New York and had the most incredible shrimp scampi at Carmine’s and we were bound and determined to recreate it at home! After years of perfecting and making for most of our at home date nights, this has become a household favorite! This Shrimp Scampi is made with really simple ingredients like shrimp, butter, olive oil, garlic, linguine, lemon, white wine and lots of Parmesan cheese and the best part is that it comes together in one pan in under 30 minutes. Pair it with your favorite glass of white wine, a side salad and some fresh bread for the perfect date night dinner! 

Tips & Substitutions

  • This is a relatively simple recipe that is made from just a handful of ingredients. Because that is the case, I find that this is a recipe where using high quality ingredients makes a big difference! A few ways to do so are using a higher quality butter (Tillamook & Kerrygold are two favorites of mine), freshly minced garlic (avoid jarred garlic here), freshly grated Parmesan cheese (will make a huge difference in how evenly it melts) and lots of fresh parsley!
  • It is very important to reserve some of the pasta water before straining - be sure to do so!
  • For the shrimp, it is best if you are able to buy uncooked, peeled, devained shrimp. Remove the tails before tossing them in the seasoning mixture and cook them for only about 2 minutes per side. If you only have access to cooked shrimp, toss them in the olive oil and seasoning mixture and sauté for about 1-2 minutes to warm and remove. 
  • For the white wine, any dry white wine that you have on hand will work great! I typically use a Sauvignon Blanc or Pinot Grigio. 
  • When you add in the pasta water, start with 1/2 cup and add more as needed! You can adjust based on how thick/thin you would like your sauce. 
  • Don’t forget to set aside some freshly grated Parmesan cheese, parsley and red pepper flakes for topping! Serve with a glass of white wine, a side salad & some fresh bread.

Ingredients

– 1lb shrimp, devained & detailed

– 1 tsp garlic powder

– 1 tsp onion powder

– 1 tsp paprika

– Salt & pepper

– 2 tbsp olive oil

– 12oz linguine

– 1/2 cup (1 stick) of butter

– 4-6 cloves garlic, diced

– 1/4-1/2 tsp red pepper flakes

– 1/2 lemon, juiced

– 1/2 lemon zested

– 1/4 cup white wine

– 1 cup parmesan cheese

– 1/2-1 cup pasta water

– 1/4 cup parsley

Directions

  1. Prepare pasta according to packaging, reserving 1 cup of pasta water before straining & set aside
  2. Season shrimp with garlic powder, onion powder, paprika, salt and pepper until evenly coated
  3. In a large pan over medium heat, add olive oil and seasoned shrimp. Cook for 1.5 minutes, flip shrimp over and cook for another 1.5 minutes. Remove from the skillet
  4. Add butter, garlic, red pepper flakes, lemon juice and lemon zest and bring to a simmer. Add white wine and simmer for another 5 minutes
  5. Add pasta, shrimp, parmesan cheese, pasta water and parsley and mix until well combined and the cheese has fully melted
  6.  Plate with extra parmesan cheese, parsley and red pepper flakes and ENJOY!
