Everyone’s favorite dip at the party – queso! This Skillet Queso has the perfect ratio of meat to cheese to add-in’s and includes ingredients like Rotel tomatoes, diced red onion, pickled jalapeno’s and taco meat. It is a one pan appetizer that is simple yet a guaranteed crowd pleaser.

Tips & Substitutions

  • As the recipe title suggests, I love to make this queso in my cast iron skillet. I have a Staub cast iron skillet that I use and love, but Lodge makes a great, affordable cast iron skillet as well. If you don't have a cast iron skillet, a large pan will work great.
  • To make this vegetarian, simply remove the meat from the recipe. If you are choosing to use meat, ground beef or chorizo work great.
  • I love using Simply Organic Southwest Taco Simmer Sauce as I find it adds great depth of flavor, but if you cant find it taco sauce or any thin/runny salsa will work just fine. 
  • Once you have cooked your meat and added the mix-in's and cheese, it is important to keep an eye on it and give it a stir every few minutes to ensure that the cheese is melting evenly and it is not burning onto the bottom of the skillet.
  • Once the cheese has evenly melted, remove from the heat, top with garnishes for added texture and flavor & serve with your favorite tortilla chips!

Ingredients

– 1 lb ground beef or chorizo

– 1 packet Simply Organic Southwest Taco Simmer Sauce OR 1.5 cups taco sauce of choice

– 1 can Rotel tomatoes

– 1/2 cup red onion

– 1/4 cup pickled jalapeños

– 1 lb velveeta Cheese, cubed

– 8oz pepper jack cheese, cubed

– Garnish: Diced tomatoes, red onion, cilantro, jalapeños, etc!

– Tortilla chips to serve

Directions

1. In a large pan (preferably a cast iron skillet) over medium heat, add ground beef and cook until browned

2. Add Simply Organic Southwest Taco Simmer sauce, Rotel tomatoes, red onion and jalapeños and mix until well combined

3. Add velveeta cheese and pepper jack cheese and mix until well combined. Continue to mix every 3-4 minutes for about 15 minutes until the cheese has fully melted

4. Top with tomatoes, red onion, fresh cilantro and jalapeños, serve with your favorite tortilla chips & ENJOY!
