This Taco Pasta is cheesy, creamy, packed with flavor and takes 30 minutes to prepare – the perfect weeknight meal that the entire family will LOVE! It is a recipe that combines two of our weeknight dinner staples – tacos & pasta – and uses common ingredients that you probably already have in your pantry. There are vegetarian & dairy-free modifications listed below!

Tips & Substitutions

  • To make this dish vegetarian, remove the beef and beef broth, add in a can of black beans at the same time as the chilis and simmer sauce and use vegetable broth
  • Feel free to substitute ground beef for ground turkey or ground chicken if you would prefer.
  • This was a recipe posted on socials in partnership with Simply Organic, which is why their Simmer Sauce is listed in the ingredients! You can find this product online or at your local natural foods store, but if you don't have access to it, feel free to substitute with 1 taco packet seasoning and 3/4 cup taco sauce or salsa.
  • To make this dish dairy-free, feel free to substitute the heavy cream for unsweetened, full fat canned coconut milk and the cheese for your favorite dairy-free cheese.
  • I am using shell pasta for this recipe, but any small-medium pasta shape will work! You just want to ensure they are bite sized or smaller.
  • In order for your cheese to melt the most evenly, it is best that you use freshly grated cheese. Pre-shredded cheese will work in a pinch, but it may not melt as silky/creamy as freshly grated.
  • I like to garnish with some fresh parsley to add some color and flavor!

Ingredients

– 1 tbsp olive oil

– 1 yellow onion, diced

– 1 red bell pepper, diced

– 4 garlic cloves, minced

– 1 lb ground beef

– 1, 4oz can green chilis

– 1 package Simply Organic Mild Taco Simmer Sauce OR if you don’t have access to this, you can use a taco seasoning packet and 3/4 cup taco sauce/salsa

– 4 cups beef broth

– 1/2 cup heavy cream

– 12 oz medium shell pasta

– 1 cup cheddar cheese (freshly grated is best)

– 1/2 cup mozzarella cheese (freshly grated is best)

– Cilantro to garnish

Directions

  1. In a large saucepan over medium heat, add olive oil, onions, red bell pepper and minced garlic and saute for 4-6 minutes until fork tender.
  2. Push the onions and peppers to the edge of the pan to create a hole in the center, then add ground beef and cook until browned.
  3. Add green chilis and Simply Organic Mild Taco Simmer Sauce and mix until well combined. Add beef broth and heavy cream and bring to a boil.
  4. Add pasta and push the pasta down into the liquid, cover and cook according to the pasta package, stirring at the halfway point.
  5. Add 1/2 cup cheddar cheese and mozzarella cheese and mix until well combined. Top with an additional 1/2 cup shredded cheddar cheese and cover for 3-4 minutes until melted. Garnish with cilantro & ENJOY!
