The Best Ever Breakfast Bake

This is just as the name suggests – the Best Ever Breakfast Bake. Made with scrambled eggs, creamy sausage and cheddar cheese in between croissant roll sheets, this is my idea of the perfect breakfast. My family makes this the morning of every holiday or any time we have guests over because it is always a crowd pleaser. I promise it will become your family staple, too!

Tips & Substitutions

  • My favorite vegetables to include in this breakfast bake are onions and bell peppers, but feel free to add in your vegetables of choice!
  • I personally prefer to use ground breakfast sausage for this recipe, but using diced sausage links would also work. The reason I like to push the onion & pepper to the edge of the pan before adding the sausage is to make sure that the sausage gets nice & browned.
  • It is important to transfer the breakfast sausage mixture directly into the bowl with cream cheese & let it sit for 4-5 minutes so that the cream cheese softens and mixes in easily.
  • Gently fold the eggs into the creamy sausage mixture to ensure the eggs maintain their texture.
  • If you are able to find croissant roll sheets, that will work best here! If not, a can of regular croissant rolls will work.
  • I often get the question of if you are able to prep this dish in advance. The only step that I would recommend prepping in advance is the sausage and cream cheese mixture. It will taste best if you scramble the eggs immediately before baking.

Ingredients

-2 tbsp olive oil

– 1 yellow onion, diced

– 1 green pepper, diced

– 1 lb breakfast sausage

– 8 oz cream cheese

– 12 eggs

– 2 cans of croissant rolls (if you can find the sheets, that would work best!)

– 1.5 cups shredded cheese

Directions

  1. Pre-heat oven to 375 and grease a 9×13 pan with cooking spray
  2. In a large pan over medium heat, add olive oil, onions and bell peppers and saute until fork tender. Push the onions and bell peppers to the edge of the pan to create a hole in the center, then add breakfast sausage. Cook the sausage until browned, then mix with the peppers and onions
  3. Add cream cheese to the bottom of large bowl, then add the warm sausage and pepper mixture to the top. Let it sit for about 4-5 minutes to warm the cream cheese, then mix until well combined
  4. Whisk eggs together, then scramble over a low-medium heat. Once they have cooked through, gently fold into the sausage mixture
  5. Place 1 sheet of croissant rolls to the bottom of the pan, then add the sausage and egg mixture on top. Top with shredded cheese and another sheet of croissant rolls
  6. Bake for 25 minutes or until the top is golden brown & ENJOY!
