Ingredients

– 1 baguette, thinly sliced
– 3 tbsp olive oil
– 2 garlic cloves
– 4 peaches, finely diced
– 1 cup basil, chiffonade cut
– 1 tbsp honey OR hot honey
– 1/2 lemon, juiced
– 1 cup ricotta cheese
– Balsamic glaze

Directions

1. Line a baking sheet with foil, evenly place sliced baguette pieces, drizzle with olive oil and bake at 400 for 12-15 minutes, flipping halfway through until both sides are golden and crisp
2. While the crostini’s are still warm, peel garlic cloves and rub into each crostini. Set aside
3. In a food processor or high speed blender, add ricotta cheese and blend for about 1 minute until smooth
4. In a bowl combine diced peaches, basil, hot honey and lemon and mix until well combined
5. Top each crostini with whipped ricotta, peach bruschetta, a drizzle of balsamic glaze & ENJOY!
