Ingredients

Chicken:

  • 1.5lbs chicken breast
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp pepper
  • 1/2 tsp salt

Fajita vegetables:

  • 1 orange bell pepper, julienned
  • 1 red bell pepper, julienned
  • 1 yellow bell pepper, julienned, julienned
  • 1 onion, julienned
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp olive oil

Toppings:

  • Black beans
  • Pico/salsa of choice
  • Shredded romaine lettuce
  • Fresh cilantro
  • Avocado

Creamy Chipotle Dressing:

  • 3 garlic cloves, minced
  • 1/3 cup olive oil
  • 1/2 lime, juiced
  • 2 chipotle peppers in adobo sauce
  • 1/4 cup honey
  • 1/4 cup plain Greek yogurt
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp water

Directions

  1. Prepare the Success Boil-in-Bag Jasmine Rice according to package instructions. Set aside.
  2. Season the chicken with olive oil, cumin, paprika, salt, and pepper. Grill the chicken for best results, or bake in a preheated 350°F oven for 30-35 minutes. Once cooked, dice the chicken and set aside.
  3. In a large skillet, heat 1 tbsp olive oil over medium heat. Add the julienned bell peppers and onion, seasoning with cumin, paprika, salt, and pepper. Cook for 8-10 minutes, stirring occasionally, until the vegetables are tender-crisp.
  4. For the creamy chipotle dressing, combine all dressing ingredients in a blender or food processor. Blend until smooth and creamy.
  5. Assemble your Chipotle Chicken Bowls by layering the jasmine rice, seasoned chicken, fajita vegetables, and your choice of toppings. Drizzle with the creamy chipotle dressing and enjoy!
