Ingredients

  • 2 tbsp butter
  • 1 red onion, finely diced
  • 3 bell peppers, finely diced (I like to use a variety of colors here! In the image shown, I used yellow, orange & red)
  • 1 jalapeno pepper, deseeded & diced
  • 4 garlic cloves, minced
  • 1 packet taco seasoning (~1-1.35oz)
  • 2 tbsp tomato paste
  • 1, 15oz can of corn, drained, rinsed
  • 1, 15oz black beans, drained & rinsed
  • 1, 14oz can crushed tomatoes
  • 1, 4oz can diced chilis
  • 3 cups diced chicken
  • 1, 15oz canned unsweetened coconut milk
  • 3 cups chicken broth
  • 2 tsp hot sauce (adjust based on preference)
  • Garnishes: cilantro, sour cream, tortilla strips, shredded cheese, green onions, jalapenos, avocado, etc!

Directions

  1. In a large pot over medium heat, melt butter. Add onion, bell pepper, jalapeno and garlic, stir to combine and simmer for 3-4 minutes until fork tender
  2. Add taco seasoning & mix to combine evenly, then add tomato paste & mix again. Simmer for another 2-3 minutes
  3. Add corn, black beans, crushed tomatoes, diced chilis, canned unsweetened coconut milk, chicken broth and hot sauce and stir to combine. Add chicken and mix again.
  4. Bring soup to a simmer and simmer for about 10-15 minutes
  5. Garnish with toppings of choice & enjoy!
