Ingredients

  • 3-4 cups Success Boil-in-Bag Jasmine Rice
  • 2 lbs chicken breast
  • 1 yellow onion, julienned
  • 1 red bell pepper, julienned
  • 1 green bell pepper, julienned
  • 1, 13.5oz can unsweetened full fat coconut milk
  • 3/4 cup peanut butter
  • 1/2 cup chicken broth
  • 1/4 cup soy sauce
  • 4 garlic cloves, minced
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp fish sauce
  • 1/2 lime, juiced
  • Fresh cilantro, crushed peanuts and fresh lime to serve

Directions

  1. Start by making the peanut sauce – whisk together canned coconut milk, peanut butter, chicken broth, soy sauce, minced garlic, honey, rice vinegar, fish sauce and lime juice until smooth
  2. Place chicken breast, onion and bell peppers into the crockpot, then pour the peanut sauce over top. Let this cook for 4 hours on high or 6 hours on low
  3. About 10 minutes before serving, prepare Success Boil-in-Bag Jasmine Rice according to packaging
  4. After 4-6 hours in the crockpot, remove the chicken breast and shred with two forks, then add back into the crockpot
  5. To serve, plate the shredded chicken over top of the rice, garnish with fresh cilantro, chopped peanuts and freshly squeezed lime juice – ENJOY!
