– 2 tbsp olive oil
– 2 lbs chicken breast
– 1 tbsp garlic powder
– 1 tbsp onion powder
– 1 tbsp dried oregano
– 1 tsp salt
– 1 tsp pepper
Creamy Mushroom Sauce
– 2 tbsp butter
– 1/2 yellow onion, diced
– 4 garlic cloves, minced
– 8oz baby bella mushrooms, diced
– 1 tsp salt
– 1 tsp pepper
– 1 tsp dried oregano
– 1/2 cup white wine
– 1 cup heavy cream
– 1 cup chicken broth
– 1/2 cup parmesan cheese
To serve:
– 2 cups rice
– Parmesan cheese
– Fresh thyme

Directions

1. Prepare rice according to packaging, then set aside until plating
2. Season chicken breast with garlic powder, onion powder, dried oregano, salt and pepper
3. In a large skillet over medium heat, add olive oil and chicken breasts. Sear for about 5 minutes per side until golden, then remove from the skillet and set aside
4. To make the cream sauce, start by melting butter in the skillet, then add onion, minced garlic and mushrooms and saute for about 5-7 minutes until fork tender
5. Season with salt, pepper and dried oregano, then add white wine and simmer until most of the liquid has been reduced, about 4-5 minutes
6. Add chicken broth, heavy cream and parmesan cheese and mix until well combined, then bring to a simmer
7. Add chicken breasts back into the skillet and cover for another 5-7 minutes until the chicken is fully cooked through
8. Serve the chicken breast on a bed of rice, topped with extra sauce, parmesan cheese and fresh thyme & ENJOY!
